I love quiche and especially this one when asparagus is abundant. Serve with a fresh fruit salad and you will have a wonderful meal.
1 pie crust, 10-inch lightly baked
2 cups shredded cheddar cheese
1 cup cooked chicken shredded
6 bacon slices crisply cooked, cut into 1-inch pieces
1/4 pound asparagus
1 1/2 cups half and half or milk
4 eggs slightly beaten
1/4 teaspoon salt
1/8 teaspoon black pepper
Yield 6 servings
Preheat oven to 350 degrees. Prepare pie crust and let cool before filling.
Sprinkle chicken and bacon over bottom of crust. Place asparagus in a spoke pattern on top of bacon, trimming the ends of the asparagus as needed to fit the pie pan.
In a medium bowl, stir together the half and half or milk, slightly beaten eggs, cheese, salt and pepper. Gently pour mixture over chicken, bacon and asparagus.
Bake for 40 to 45 minutes or until golden and set in center. Let stand 10 minutes.
