This is the guacamole recipe that I use whenever I make guacamole. It turns out nice and creamy, and is also low-fat. It doubles nicely if you are serving a big crowd.
2 avocados ripened
2/3 cup lowfat cottage cheese
2 tablespoons fresh lime juice
1 tablespoon green onion
1/8 teaspoon chili powder preferably Chipotle chili powder
2 cloves garlic
salt and pepper
Yields 6 servings
Instructions Slice avacado in half lengthwise and separate the halves by gently twisting. Remove the pit and scoop out the flesh of each half using a spoon.
In a food processor, combine all the ingredients and puree until smooth. Serve immediately or chill, covered tightly.
