This pasta dish is one of our favorites. I have left it in its original form, but I usually substitute whole milk or part milk and half and half to cut down on the calories. I usually use Canadian bacon but ham works great too. Using fresh herbs really makes it taste nice and fresh.
4 tablespoons unsalted butter
6 ounces ham slice 1/8" thick sliced into strips
2 tablespoons unbleached flour
2 cups heavy cream
1 cup cooked peas
1 teaspoon coarsely ground pepper
2 tablespoons grated parmesan cheese
2 tablespoons fresh chives cut in 1/4-inch pieces
1 tablespoon fresh parsley chopped
1 pound fettucine cooked and drained
Yields: 6 Servings
Melt butter in heavy saucepan. Add ham and heat low for 1 minute. Add flour and cook for another 3 minutes, stirring.
Slowly add cream, stirring with a wire whisk. Continue cooking until sauce thickens, about 5 minutes.
Add peas, pepper, parmesan cheese, chives. Simmer for 1 minute.
Add fettucine and toss with sauce.
