We are always looking for something to serve our families on special Holiday mornings. This casserole is a little different from some of the other breakfast casseroles out there and it is very good. It can be prepared ahead of time and refrigerated until you are ready to bake it. Enjoy!!
10 eggs beaten
1/2 cup flour
1 teaspoon baking powder
1/2 cup butter melted
2 cups Monterey jack cheese grated
2 cups cheddar cheese grated
1/2 pint sour cream
4 ounces green chiles diced
1/2 pint cottage cheese
Beat eggs well. Stir together flour and baking powder. Gradually add flour mixture to beaten egg, stirring until well combine. Add melted butter and remaining ingredients. Stir until well combined.
Preheat oven to 350 degrees. Grease 9 x 13 baking pan. Pour egg mixture into pan and bake for 45 minutes or until done.
Can be prepared ahead of time, covered and refrigerated until ready to bake. Allow to sit out for 15 minutes before baking.
