We used to get Blueberry Buckwheat pancakes at a breakfast place in Kansas. We talked them into giving us the recipe – they are great!! Definitely worth the calories!!
3/4 cup buckwheat flour plus 2 tablespoons
1/2 cup all-purpose flour
1 1/2 teaspoons sugar
2 1/4 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/8 cup vegetable oil
1/4 cup water or more if needed
2/3 cup milk
1 cup blueberries
Yields 2 servings
In a large mixing bowl, mix dry ingredients together. Then add eggs, vegetable oil, water and milk, stirring to combine. Add more water in necessary to reach desired batter consistency. Gently stir in blueberries.
