With all the abundant fresh basil right now, I thought this might be a good recipe for something different. It is very easy to prepare and is a little different from the usual rice dish.
1 cup basmati rice or jasmine rice
2 tablespoons chopped fresh basil
2 teaspoons fresh lemon juice
2 teaspoons olive oil
Yields 6 servings
Cook rice according to package directions. Pour rice into a serving bowl. Stir in basil, lemon juice, and olive oil; serve immediately.
