This is a very easy to make fish recipe and most of the ingredients you probably have in your pantry and refrigerator. You can make it with tilapia instead of catfish, or any other mild flavored fish.
1 cup fine dry breadcrumbs
1/3 cup grated Parmesan cheese
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon paprika
2 tablespoons chopped fresh parsley optional
1/2 teaspoon chopped fresh oregano optional
6 catfish fillets
1/2 cup butter melted
lemon wedges
Yields: 6 Servings
Stir together first 5 ingredients and, if desired, parsley and oregano. Dip catfish in butter; dredge in breadcrumb mixture, and place on a parchment paper-lined baking sheet.
Bake at 375 degrees for 25 minutes or until fish flakes with a fork.
