These muffins are super easy to make and are great for breakfast or with afternoon tea. They are better the second day after the flavors have had time to meld a bit, but they are excellent hot out of the oven too!!
1 cup applesauce
1 cup vegetable oil
2 eggs
1 1/2 cups sugar
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon allspice or more if needed
Yields: 20 Servings
Combine applesauce, vegetable oil, sugar and eggs in a large mixing bowl and combine well.
Sift together the flour, baking soda, baking powder and the spices. Gradually add to the applesauce mixture, mixing until well combined.
Preheat oven to 400 degrees. Pour into greased muffin pans or muffin pans that have been lined with cupcake holders. Bake 13 - 15 minutes. Remove from muffin pans and cool completely on a wire rack. Store in an airtight container when cooled.
